You can cook lush and tender pancakes on kefir with eyes closed, if you know 2 key secrets:

  • Warm kefir. Or at least room temperature. It is very important!
  • Flour with soda. Often, when making pancakes, soda is added to kefir. From the point of view of chemistry, this is a big mistake, since in this case the soda extinguished with kefir “loosens” not the dough, but ... the air.

1. Pancakes on kefir for the day off

This recipe is basic, following it you can cook the most lush and tasty pancakes on yogurt without yeast simply and relatively quickly. Why did we call it a weekend recipe? The fact is that it assumes the dough is tested within 20-30 minutes. If on weekdays it is quite difficult to carve out the extra half hour, then on weekends it’s no problem.

Number of fritters: about 20 pcs.


  1. Kefir - 2 glasses (500 ml.);
  2. Flour - 2.5 cups (400 g);
  3. Egg - 1 piece;
  4. Soda - 2/3 tsp;
  5. Salt - 1/3 tsp;
  6. Sugar - 3 tbsp. spoons (to taste);
  7. Vegetable oil (for frying).


Step-by-step recipe:

  1. Heat kefir 30-40 seconds in the microwave. If there is no microwave, then you can heat the kefir in a saucepan over low heat for about 5 minutes or just get it out of the refrigerator an hour before cooking.

  1. Mix the egg, salt and sugar in a bowl with a whisk, then pour in the warm kefir and stir again actively.
  2. Mix the flour and soda in a separate bowl, then sift it through a sieve, pour it into a bowl of kefir and mix. It is better to do this gradually, in several approaches. The dough should turn out a little thicker than sour cream. It should not drip off the spoon, but rather crawl.
  3. Leave the dough for 20-30 minutes and no longer stir (!). By the end of proofing in the test should appear bubbles, but even if they do not appear, do not worry - the pancakes will still get lush. If you are in a hurry, let the dough stand for at least 5 minutes in a warm place.
  4. Heat the griddle over medium heat. For example, on power 5 out of 9, if the stove is electric The frying pan and butter need to be heated sufficiently strongly, then the dough will not spread, but will immediately begin to rise.
  5. A tablespoon of grab dough from the edge, trying not to disturb the bulk, and pour it into the pan, holding the spoon upright. We form several pancakes: 1 tablespoon of dough = 1 pancakes.
  6. Fry fritters, first with one side with the lid closed, and then with the second - without the lid for about 2-3 minutes. This trick will not allow the dough to remain raw. If pancakes are roasted too fast, the fire should be reduced, otherwise the crusts will turn brown and the middle cores will not be baked.


  • If there is a mixer, then it is better to use it in Step 2;
  • In the dough, you can add apple slices or raisins, as well as vanilla sugar;
  • To remove excess fat, ready-made pancakes can be set aside on paper towels;
  • Fritters on kefir can be cooked for future use, as they remain for a long time lush and tasty.In this case, before serving, pancakes should be heated in butter.

2. Express recipe for every day

This recipe is great for weekday breakfasts. Following it, you can cook pancakes on kefir in 15 minutes. They will have a little pomp, but a very delicate and pleasant taste.

  1. Kefir - 1 cup (250 ml);
  2. Flour - 1.5 cups (320 g);
  3. Egg - 1 piece;
  4. Soda - 1/2 tsp;
  5. Salt - 1/3 tsp;
  6. Sugar - 3 tablespoons (to taste);
  7. Vegetable oil (for frying).

Step-by-step recipe:

  1. Mix kefir with 2 tbsp. spoons of hot water.
  2. Add the egg, salt and sugar, then whisk the mixture.
  3. Pour the flour through the sieve.
  4. Add soda (not earlier) on top of the flour and mix the dough until smooth. It should have a consistency of thick cream.
  5. Heat the pan and oil sufficiently (this is important!) Over medium heat.
  6. Make a few pancakes with a tablespoon. 1 tbsp. spoons of dough = 1 pancakes. Grill each side for 1-2 minutes over medium heat.
